Hangikjöt tartar in Salad Taco

On the weekend of the 13. and 14. December Icelandic Lamb has been at the Matarmarkaður – The Artisan Food Fayre, in the Harpa in Reykjavik. This year we did some showcooking. And this is one of our recipes:

starter dish for 4 pers.

Ingredients

300 g traditionally smoked lamb (hangikjöt)

15 g flatbread

30 g shallot

20 g olive oil

30 g chives

½ lemon

5 g flaky sea salt

3–4 little gem lettuce leaves or similar salad

1 wedge of aged cheese, preferably 24+ months

Instructions

Cut the smoked lamb into “tartar”-style small cubes and place in a bowl.

Finely chop the shallot and chives.

Break the flatbread into small pieces, almost like crumbs.

Mix the lamb with the shallot, chives, lemon zest and flatbread in a bowl.

Add olive oil and season with salt and lemon juice to taste.

Fill lettuce leaves like taco shells.

Serve the mixture in the lettuce and grate plenty of cheese on top.
